Whenever there is a holiday and I am cooking at home the first request I get from the entire family is to make pasta al forno, or better yet: lasagna. Because lasagna is a celebration. It’s rich, usually feeds a crowd, and when it comes bubbling out of the oven it makes everyone happy. Perfect for Easter, Christmas or any other holiday when we can’t quite decide what to make.
Lasagna is not an everyday kind of dish because it is, in theory, a complicated dish to pull together. But I’m here to tell you that this is just a lie I have been telling myself for years. Lasagna can (and should) be super easy to make, and I have vowed to make it more often. At least the version that I made this past Easter.
