Artichokes for a Dinner Party

Vegetables from the market in Rome

A trip to Campo de’ Fiori market in Rome inspired this dinner party menu. Since we had a big lunch, the dinner was just vegetables (plus some cheese). The star of the meal were the artichokes which are in season right now. I cooked them in the instant pot, which I’ve written about in the past. But since I’ve updated the recipe a bit (to make it even easier) I’ve included the new version below.
