I was lucky enough to be able to use wild asparagus I foraged in Umbria, but don’t worry. You can use regular asparagus just as easily. Just make sure you use the very tender parts, and either cut then vertically into thin strips, or else into little rounds. And when asparagus season ends? No worries, just switch over to zucchini.
