If you’ve ever had Cacio e Pepe in Rome I’m sure you thought: this can’t be that hard to recreate at home. Only 3 ingredients? No problem.
But like many people I know (my own daughter included, who took the video down since it was such a mess) making it at home can result in a clumpy mess with all the cheese at the bottom of the bowl, topped with naked pasta on top. Not quite the creamy bowl of goodness you had in Rome, am I right?
