Celery is one of those vegetables that often gets ignored. It usually shows up as an extra ingredient. In Italy it is simply considered an ‘odori’ or flavoring, and a few stalks always get thrown in your bag along with some parsley and maybe a small carrot, when you buy vegetables at the market. Poor celery, always a bridesmaid and never a bride.
