We eat such delicious meals during our tour in Parma it’s always difficult for me to choose a favorite. But it’s easy for me to share a menu (plus a recipe and a video) that you can recreate at home.
We are very lucky that our friend Antonia invites our group to visit her during our week in Parma. She lives in a truly beautiful location in the middle of a private park. Not a garden, but a park, with hundred year old trees and grounds covering about 10 hectares of land. Her grandfather bought the property and the grandchildren, rather than break the property into lots to sell for development, decided to keep it in the family. There are now four houses where Antonia and other family members live in this idyllic compound.
Antonia lives in the oldest building within the park with her husband (who owns one of the best restaurants in Parma) and their two daughters. And this is where she teaches cooking classes. It’s not an official cooking school, since we all pull up chairs in her kitchen while learning to make local dishes. The whole experience is cozy and warm and the food so delicious.
