I bet you thought I was done with zucchini recipes for the year. Not quite. I’ve got one end-of-summer pasta dish to share. We made this a few weeks ago based on a photo Sophie saw on this website. (Note: it’s a great resource for Italian recipes).
Sophie’s main concern was that I cut the zucchini exactly like the one in the photograph. She didn’t want big chunks of mushy zucchini, but small flecks of barely cooked zucchini. Did I mention Sophie is extremely particular when it comes to food? Hmm…I wonder where she got that from?
When I had a look at the recipe I realized that the zucchini were actually grated, not cut. So I took this idea and went with it.
We had it for dinner, at the end of a long lazy Sunday. Since it’s not really a cooking video (the pasta shows up at the end of the afore mentioned long lazy day), I’m including the detailed recipe below. Hope you enjoy it!
