One of my favorite restaurants in Puglia is Trattoria La Puritate in the port town of Gallipoli. I’ve been going there for years and one of the things we almost always order is a pasta with shrimp, cherry tomatoes and zucchini. This area of the coast is known for an especially sweet variety of shimp called gamberi viola which are used in this recipe.
