Thanks for the great update! Do you have a recipe for a white Negroni? I’ve had them in Rome in a funky bar in the Piazza Risorgimento neighborhood. Unfortunately I think they use a liquor that is very hard to find in the US.
I do! I tried to find the video of me making it, but it's lost in the ether. Here is the recipe: 1 oz gin, 1 oz sweet white vermouth, 1 oz genziana. Genziana is a super bitter after dinner drink that is made by several makers in Italy. It is the main ingredient to add bitter in most amari.

As I must be gluten free in the U.S. due to our "dirty" grain exponentially loaded with gluten, can you tell me if eating breads etc in Italy and Spain have less gluten? I am in my 70's and as a child had no problems but that is of course, prior to the U.S. adding so much gluten to wheat.
That's a very complicated question with a long answer. The short version is that all wheat has gluten. No one 'adds' gluten to wheat. You may be referring to over processed foods which is an entirely different story. If you are gluten intolerant in the states, you will most likely be gluten intolerant in Italy. However if your problems stem from eating overly processed foods, then minimally processed foods are much more available in Italy.

I would love to know the contact info for the couple producing flours in Puglia as i’m moving there in June and have a woodfired oven at my home there and would love to support a local business for flours for my sourdough pizza focaccia and breads. The location of the shoe store would be great too. Thanks in advance and happy traveling.
So sad to see shops like these closing. Unfortunately most have closed in Dublin and it’s now a city full of chains and fast food restaurants. It has lost its identity almost completely now. I really hope Rome doesn’t do the same 🙏
