I agree with your comments. It is one thing to say that a recipe is “inspired by” or is “a riff on” an iconic dish, but quite another to change the dish fundamentally while retaining the name.
Agree with ALL your rantings today. Except I thought the Tucci Florence was a bit better than Naples. Am worried about Sicily - my husband's father was Sicilian - and Anthony Bourdain, whom I grew to really admire, did a terrible job there! Totally got your rant about the authenticity of the recipes. I'd thought the same thing especially about the carbonara. My own pet peeve: people that radically and fundamentally change the recipes and then post negative reviews. Change 6 ingredients and leave out 3 steps and you hate it? Come on! Or even worse, the ones who post something snarky and judgmental without even trying it - "you shouldn't eat such a rich dish" - like you're having it every day?!?!? My own rant finished.

Quick release. Usually with vegetables it's quick release, to stop them over cooking. I also turn off the 'keep warm' button.

I think the more we know about a place, the more critical we are. But in general, I think the CNN series is a great thing for Italian tourism.
